Pancakes enough to feed 4 people with enough for leftovers
Ingredients
Dry
- 3 c all-purpose flour
- 1 tbsp. + 1 tsp teaspoons baking powder
- 2 tsp salt
- 2 tbsp white sugar
- 1 tbsp cinnamon
Wet
- 2 1/2 c milk
- 2 eggs
- 3 tbsp butter, melted
- 2 tsp vanilla
Directions
- In a large bowl, sift together the flour, baking powder, salt and sugar
- Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
